Fish stew

[q] Quick, easy, and absolutely delicious fish stew! Fresh fish fillets cooked in a stew with onions, garlic, parsley, tomato, clam juice and white wine. Seasoned with oregano, Tabasco, thyme, salt and pepper.

Prep time: 10 minutesCook time: 25 minutesYield: Serves 4

INGREDIENTS6 Tbsp olive oil1 cup of chopped onions2 large garlic cloves, chopped2/3 cup fresh parsley, chopped1 cup of fresh chopped tomato (about 1 medium sized tomato)2 teaspoons tomato paste8 oz of clam juice (or shellfish stock)1/2 cup dry white wine (like Sauvignon blanc)1 1/2 lb fish fillets (use halibut, cod, red snapper, or sea bass), cut into 2-inch piecesTouch of dry oregano, Tabasco, thyme, pepperSalt

METHOD

1 Heat olive oil in heavy large pot or Dutch oven over medium-high heat. Add chopped onion and garlic and sauté 4 minutes. Add parsley and stir 2 minutes. Add tomato and tomato paste, and gently cook for 10 minutes or so.

2 Add clam juice, dry white wine, and fish and simmer until fish is cooked through, less than 10 minutes. Add seasoning. Salt to taste. Ladle into bowls and serve.

Haha, I saw your comment this morning and totally didn't get it and then I saw it again this afternoon and finally got it! This was one of the easiest things I've ever made and so good, healthy too!

Mike and I had a mouse infestation, I successfully sealed up where they were coming in and thankfully never ended up catching one in the mouse electrocution chamber. I did use this parsnip tail to scare Mike though. it was my first time roasting root vegetables, I always thought I hated beats until I had them roasted and now I love them.

New glass block windows!

I know this doesn't seem like much but a lot of time and thought and dollars went into these windows. I'm so happy to finally have them, they let in light, keep out the cold wind, squirrelly mice and terrifying killers.

The squirrels might actually be the final straw, little bastards ate a hole in the side of the house to get into the attic. When I told the neighbors that we were thinking of getting rid of it they were so happy, you should have seen her face light up! She hates it because she can't grow anything in her yard cause the roots poison most plants. Even if we remove it the roots will still be there for probably years to come.

It's a very beautiful tree and I do have a deep family connection to black walnut trees. so it's not an easy decision. If we decide to sell it at least it will still have lasting beauty in the form of furniture and bowls, cutting boards etc. I also can use the money to pay for all the thousands of dollars of work that needs to be done over the summer.
