So, I'm trying to open a restaurant right on Elmwood in the Village...ok, it's kind of hard because I'm living in Vegas! Now, what I'm trying to do is focus on using local farmers, wineries, distillers, etc.....and I want to create an approachable place that wouldn't alienate anyone (i.e. too formal, too loud, too greasy!). I want a casual environment with top notch food (right now I work under 3-Star Michelin rated chef Guy Savoy from Paris)...A public house with food of the highest quality (NOT of the highest price!): a GASTROPUB.
